This nutty flavored caviar is farm raised white sturgeon, native to California. The pearls are large, and light to dark brown in color. The White Sturgeon is the largest freshwater fish in North America and is the third largest species of the Sturgeon, after the Beluga and the Kaluga. Species: Acipenser Transmontanus.

Forget Russian caviar if you can have California Premium White Sturgeon. My husband and I have eaten caviar in Russia and on the Trans-Siberian Railroad. The Californian caviar is the equal or better, beautiful large pearls and not salty. We are lucky to have it at our door step.

My husband and I have eaten quite a selection of caviar, including in Russia and on the Trans-Siberian Railroad. The California Premium White Sturgeon caviar is at least as good, if not better: smooth, not salty, with beautiful pearls.
I highly recommend the California caviar. It's delicious with Russian blinis but my husband just eats it with the spoon.
