Paleta Iberica de Bellota Ham is considered the highest quality ham across the world. Iberico de Bellota is produced from the “Pata Negra” (black hoofed) pigs of Spain. They are reared on a natural diet of acorns and grasses, and develop a meat that is high in fat and richly flavored. The trick is that by using a free-range method and an exclusive acorn-only diet, denominated “Bellota”, the meat develops a texture is smooth and tender, and a flavor that’s soft and full of fat (the healthy monounsaturated kind) that dissolves in the palate. It is found only in Spain, and only exported to the United States by Embutidos Fermin. This particular product is the shoulder cut, virtually the same in flavor as the ham (hind leg) cut, but with slightly (about 10%) more bone in it.
